Emphasis is placed on improving soil quality with compost, mulch, and compost tea.  No store-bought fertilizers, soil amendments, pesticides, compost activators, etc. are used. Recipe for pasta sauce: Ingredients - appx. 5 lbs tomatoes, 6 Jimmy Nardello peppers, 1 cayenne pepper, 1/2 large onion, 4 cloves garlic, 2 tbsp fresh oregano, 1/2 cup fresh basil dice tomatoes, peppers, and onion, mince garlic, heat olive oil in a sauce pan, sautee peppers, onion, garlic until onions translucent, add tomatoes, oregano, basil, and salt to taste, cook on low until sauce thickens, (we also added cooked vegetarian Italian "sausage"), Bharta recipe: http://www.food.com/recipe/baingan-bharta-indian-style-fire-roasted-eggplants-326627 Vegetable Biryani Recipe: http://www.foodnetwork.com/recipes/food-network-kitchens/vegetable-biryani-recipe.html</description>
