In this video, I make one of our favorite collard greens recipes: Congolese collard greens. What makes this recipe special is the peanut butter. It turns collard greens into a real treat. Ingredients: 1.5 lbs collard greens 1 onion 1 tomato 1/2 cup peanut butter salt and pepper to taste Instructions: remove the collard green stems, rinse the greens, chop the greens finely, dice the onion, dice the tomato, place 1 cup of water and the collard greens in a pot, place the pot on a med/high heat, cover, and cook for 10 minutes, stirring frequently, add more water if needed to prevent sticking, add the onion and tomato, cover, and cook for 10 more minutes stirring frequently on medium heat, add 1/2 cup peanut butter and season to taste with salt and pepper, lower heat to low and simmer for 5 more minutes, stirring frequently, enjoy!, The recipe was adapted from: http://www.congocookbook.com/vegetable_and_side_dish_recipes/greens_in_peanut_sauce.html
