        <description>We have extra Thanksgiving turkey and it's time to make our family's favorite post-Thanksgiving, leftover turkey supper...Crunchy Turkey Casserole!  Some of the ingredients can be made "homemade" rather than buying from the store SOOO Sarah teaches how to make them.  She makes homemade condensed cream of chicken soup and homemade mayonnaise. Crunchy Turkey Casserole: 2 cups chopped turkey 2 ribs celery, chopped 2 tbsp onion, minced 1/2 cup slivered almonds 1 can condensed cream of chicken soup (or homemade recipe below) 3/4 cup mayonnaise (recipe below) 1 1/2 cups or more crushed chow mein noodles Mix all ingredients. Spread in to greased 2 quart casserole dish.  Bake 350 degrees for 30-45 minutes. Homemade Condensed Cream of Chicken Soup: 3 tbsp butter 3 tbsp flour 1/2 cup chicken broth 1/2 milk 1/4 tsp salt 1/4 tsp garlic powder Dash black pepper Melt butter in small sauce pan.  Stir in flour and cook for 1.5 minutes stirring constantly.  Add broth and milk.  Stir constantly until it almost boils. Stir in seasonings.  Stir and cook until thick. Homemade Mayonnaise: 1 whole egg 1 tbsp white wine vinegar 1 tbsp dijon mustard 1/4 tsp salt 1 cup oil In a blender or food processor, blend egg for 20 seconds.  Add vinegar and mustard, blend for 20 seconds.  Begin adding oil drop by drop as blender/processor is running until 1/4 cup oil is added.  Then, pour oil in a slow stream until all oil is used and blended.  Scrape down sides and blend again.  Refrigerate and use within a week.
