        <description>http://www.edibleacres.org Basic sauerkraut recipe á là Sasha: 2 TBL salt : 2 1/4 LB cabbage herbs of choosing (some herbs are a little anti-bacterial so might inhibit the fermentation, fennel is one often discussed this way, though I [Sasha] have included fennel in ferments quite successfully....), (optional) black currant leaves (or horseradish leaves, or oak leaves; some tannic leaf to introduce a crisp-keeping helper!), Slice cabbage, add salt, massage until the cabbage releases juices -pack into a crock/food grade plastic bucket/wide mouth jar, or other applicable safe vessel for fermenting foodstuffs add some sort of air barrier (ex. reserved cabbage leaves, horseradish leaves, squash leaves -- you could skip this if you have a perfectly fitting plate for inside, or are using a jar + airlock system ), add weight ( ex. a jar that fits inside full of water or sand, ceramic weights, something else you conjure up ) + wait.... overnight, then: -check to make sure the liquid brine level has expanded to cover the surface of the cabbage, if it hasn't (if the cabbage was older + drier from the beginning it's normal for that to occur) , you can add some salty water to the crock (can start w 1 1/2 TBL salt/ quart water) -wait, wait, wait.... keep the crock in a cooler place in the house and check it periodically to see if mold is forming, if it is just gently lift it off, perhaps in a week, taste, let it keep fermenting until it reaches a point that it tastes fermented enough for you, then transfer to appropriate cool storage, https://www.paypal.me/edibleacres - A simple and direct way to ‘tip’ to help support the time and energy we put into making our videos.
