Gingerbread Granola Recipe 4-5 cups rolled oats or other rolled cereal (I use 6-grain rolled cereal from honeyville.com) 2 cups chopped pecans 2 cups chopped walnuts 1 to 1.5 cups shredded coconut 1.5 cups dried cranberries or raisins 3 tsp cinnamon 1 tsp ginger 1/2 tsp allspice 1/4 tsp cloves Mix together in a large bowl and set aside. In a small saucepan, heat the following ingredients together until melted: 2/3 cup coconut oil 1/2 cup molasses 1/4 cup real maple syrup 1 tsp. vanilla Pour the melted ingredients (syrup) over the dry ingredients and stir until all ingredients are coated with the warm syrup. Pour onto a large baking sheet lined with parchment paper and bake for 40 minutes in a 325F oven, stirring once about half way through the baking time. When cool, place in airtight container or into jars and vacuum seal.
