In terms of food storage, if you store plenty of chick peas, vegetable oil, and vinegar, you can make fresh mayo any time you want in a long term grid down situation. Products: Immersion Hand Blender https://amzn.to/3RECOau The Recipe: 1/4 cup aquafaba (bean juice--see video below) 1/4 tsp mustard 1/4 tsp salt 2 tsp sugar 2 tsp apple cider vinegar 3/4 cup canola oil Mix all ingredients except oil together in a wide mouth pint jar using an immersion blender.  When ingredients are well mixed, stream oil into mixture in a very thin stream with the blender going.  Continue to blend until mixture reaches the desired consistency.  It will thicken more when chilled in the refrigerator.
