When it has frozen in a real way I've used that time to transport large round bales of hay deep into our production areas on my truck.  When it thaws again I prioritize getting that hay spread thoroughly and deeply over young/nearly ready hugelmounds that I hope to plant in the spring.  Chipping away at this work as much as possible during the winter will make spring SO much easier for us!
