Every week Josh and I get a bunch of emails from you guys. We love hearing your stories and sharing in your triumphs and challenges... sometimes even your heartbreaks. One thing that is becoming very clear to us is that many of you are finding your way to the homesteading space by struggling with health challenges... either your own or a loved one’s, and that often times that health challenge is an auto-immune disease or cancer. That isn’t surprising. The National Institutes of Health (NIH) estimates up to 23.5 million Americans suffer from autoimmune disease. They say it is now one of the top 10 causes of death in female children and women in all age groups up to 64 years of age and that the prevalence is rising. So when I finally heard my good friend Jaime’s story of battling an auto-immune disease I knew I had to share it with you. And since Josh has been busy traveling, I asked her to come on over and do an interview with me for this week’s Pantry Chat. Her story is one of facing a huge health challenge (even being in a wheelchair), chasing down every medical route she could find, and then reclaiming responsibility for her own health and turning it around. Today, she runs a small, raw milk dairy and is one of the most energetic women I know. Any of you who have ever had dairy animals (or any animals!) know how inflexible of a job that is... you have to be on your game all the time! If you have been battling a health challenge, disease or illness, be encouraged... there is always hope.
