        <description>Great recipe, but still not 100% successful with having them puff up.  Flat breads like pita are perfect for off grid meal preparation.  We are attempting to perfect cooking them in our cast iron skillet. Pita Bread Recipe 375g all purpose flour 240g warm water (about 100-105°F) 2 tsp instant yeast 1 tbsp sugar 1 tsp salt 1 tbsp olive oil Mix by hand or in a stand mixer with a bread hook.  Mix dry ingredients together.  Add wet ingredients and stir together until most of the flour is absorbed by the water.  If making by hand, turn dough out on counter and knead for a soli 10 minutes.  If using a stand mixer, knead for 10 minutes in the mixer.  Place dough in an oiled bowl and cover with plastic wrap.  Allow to proof until double--about 40 minutes.  Divide dough into 8 equal amounts and roll each into a round ball using the technique shown in the video.  Cover dough balls with a tea towel and allow to rest for 10 minutes.  Roll each ball into a 6-7 inch circle and place on a flat surface covered with parchment paper.  Cover with tea towel and allow to rest for 30 minutes.  Place one circle of dough in a hot cast iron skillet and cook until bubbles appear.  Flip to other side and cool 2-3 minutes until it puffs up like a balloon.  Remove from skilled and keep warm in a folded tea towel.  Continue until all are cooked.  Serve warm.
